My obsession with making popsicles continues and what better way to celebrate the 4th of July but with a fabulous homemade Red White & Blueberry popsicle full of real fruit!!!



INGREDIENTS RED LAYER

3 cups of fresh strawberries, washed & hulled
3 Tbsp. instant dissolving sugar
3 Tbsp. fresh squeezed lemon juice

WHITE LAYER

1 650g tub vanilla yogurt (I used President’s Choice Pro Advantage)

BLUE LAYER

1 pint bluberries
3 Tbsp. instant dissolving sugar
3 Tbsp. fresh squeezed lemon juice

METHOD:

With a blender or a deep glass jug and a hand blender puree the strawberries, sugar and lemon together until smooth. Pour into the Dixie cup about 1/3 of the way.

Freeze for a couple of hours until stiff but you are still able to push a popsicle stick into it and it will stand up. DO not push the stick all the way to the top. You can also reinforce it with a small piece of foil. Push the stick through and press the foil around the top of the cup.



Continue to freeze for another hour. Meanwhile make the blueberry layer

In a small saucepan combine the blueberries, sugar and lemon juice. Boil over medium-low heat until the blueberries start to break down and the mixture is thick and juicy! Remove from heat and let cool. Puree the mixture and set aside covered in the fridge.

Remove the popsicles from the freezer and add the vanilla yogurt layer. Carefully spoon the yogurt in. You will need about 1 heaping tbsp. per cup. Set back into the freezer for a couple of hours until set.

Once set remove from the freezer and add the fabulous blueberry layer. Freeze until set and enjoy!!! Happy Summer and Happy 4th of July!!!

It’s strawberry season!!! You know what that means pull out that bottle of Tequila Rose and get your bake on!!!

My latest obsession … popsicles….YUM.

INGREDIENTS 3 cups fresh strawberries, washed & hulled
½ cup instant dissolving sugar
1 cup Tequila Rose Liqueur
1 500 gram tub of Greek Yogurt (I used Presidents Choice)




Combine all the ingredients in a blender or I used a glass jug and my hand blender.

Puree until smooth and thoroughly combined.

Pour into popsicle molds or small Dixie cups. Makes approximately 20 small popsicles.

Let set in the freezer for an hour and half or until the popsicles are almost set but you are able to stick a popsicle stick in. Push the popsicle stick in but do not push to the bottom. If you find the stick is not standing upright you can also use a small piece of foil with a slit to hold the stick in place. Place the foil over the cup with the stick through the foil.

Freeze until set and enjoy!!! Do not lick and drive!
